Ingredients

  • 1 box Chickapea Spirals
  • 1 block halloumi, sliced
  • 1 pint cherry tomatoes
  • 2 cloves garlic, minced
  • 3 tbsp mascarpone
  • Olive oil
  • Salt + pepper
  • Fresh basil
  • Chili flakes
  • 2 tbsp hot honey

Instructions

  1. Bring a large pot of salted water to a boil and cook the Chickapea spirals until al dente. Reserve some pasta water before draining.
  2. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the halloumi and cook until golden and crispy on all sides. Drizzle over the hot honey and toss until coated and glossy. Remove from the pan and set aside.
  3. In the same pan, add the garlic and cherry tomatoes. Cook until the tomatoes are soft and jammy, about 5–7 minutes.
  4. Stir in the mascarpone with a splash of pasta water until smooth and creamy.
  5. Add the cooked pasta to the sauce, tossing until fully coated. Add more pasta water as needed to loosen the sauce.
  6. Top with the hot honey halloumi, fresh basil and chili flakes before serving.

  1. Boil 10 cups of salted water.
  2. Add your pasta to the boiling water.
  3. Stir a few stirs so they don’t stick together.
  4. Maintain a steady boil for 5-8 minutes or until you reach your desired level of doneness.
  5. Drain, rinse and serve with your favourite sauce.
  6. Then think, “wow, I didn’t really have to guess while I cooked, thanks Chickapea.”
