Vegetarian Pasta Pizza

Vegetarian Pasta Pizza is a unique way of combining chickpea/lentil pasta with all your favorite veggies to create everyone’s favorite comfort food!

I have a slight suspicion that the recipe truly will win you over because… It’s not of the norm, and honestly, the norm is just… Well… Way too NORMAL these days… And who wants that?

Its crust is made of Chickapea Pasta! That’s right! I GROUND DOWN actual pasta made from chickpeas and lentils, into a flour… And made a CRUST out of it.  You can make this recipe your own by choosing your favorite veggies as toppings.  No rules – go with what moves you that day!

Vegetarian Pizza Pasta
Vegetarian Pasta Pizza is a unique way of combining chickpea/lentil pasta with all your favorite veggies to create everyone's favorite comfort food!

Ingredients
  • 1 1/2 cups Chickapea Pasta - any shape
  • 1/4 cup Coconut flour
  • 1/4 cup Tapioca flour
  • 2 eggs
  • 1/2 tsp black pepper
  • salt, to taste
  • 1 tbsp basil
  • 1 tsp garlic
  • 1 tsp onion powder
  • 1/4 cup water
  • 1 cup Chickapea Pasta (for topping)
  • Toppings of your choice, I chose to go “Mediterranean” and added Grilled Eggplant, Peppers, Sun-Dried Tomatoes, and Olives
Instructions
  1. In a blender add uncooked Chickapea Pasta and grind until it forms a powder which could take 5 - 6 minutes depending on the power of your blender.

  2. Then add the coconut flour and the tapioca flour and blend those ingredients together. 
  3. Throw in the two eggs (of course crack them out of their shell first) and blend again.
  4. Add all seasonings and blend.
  5. Finally, add the water and oh what do you know, blend one more time. 
  6. Grab a skillet and warm it over medium-high heat on your stove. Spray with non-stick spray.

  7. Pour your crust batter onto the skillet and shape it round like a pizza (or really, shape it however you'd like!). 

  8. Cook pizza batter roughly 3 - 4 on each side and transfer to a broiling pan.

  9. Now it's time to top your pizza, feel free to top it with whatever you'd like, I personally went the Mediterranean approach with grilled veggies and of course, the most important topping is... COOKED CHICKAPEA PASTA! 

  10. Pour a little olive oil over the top of your pizza if you're feeling frisky..
  11. And to further crisp it up... Throw it in the broiler for roughly 5 - 6 minutes.

    And then... Pull it out, let it cool down and... CHOW DOWN!
