Roasted Broccolini Vegan Mac

Hack your Mac in style with a tasty helping of cheesy Chickapea noodles. Adulting is done the yummy way when healthy vegan, gluten-free Chickapea Mac meets beautiful roasted broccolini. This recipe is remarkably cheesy and absolutely delicious.

Roasted Broccolini Vegan Mac

Broccolini Ingredients:

  • 600g fresh broccolini, washed and trimmed
  • 1 tsp red wine vinegar
  • 2 Tbsp avocado oil
  • 1 tsp dehydrated minced garlic
  • 1 tsp garlic powder
  • ¼ tsp salt

Vegan Mac Ingredients:

  • 1 package of Chickapea Vegan Mac
  • ¾ cup oat milk, unsweetened
  • 2 Tbsp vegan butter
  • 2 Tbsp plain vegan cream cheese
  • 1 Tbsp lemon juice
  • ¼ tsp table salt, rounded
  • 1 tsp garlic powder
  • ¼ cup fresh lemon juice, to taste
  • ¼ cup ranch flavoured Hippie Chips, crushed
  • Finishing salt to taste

 Broccolini Instructions:

  1. Preheat the oven to 425°F
  2. Place clean broccolini in the bottom of a medium mixing bowl 
  3. Pour over red wine vinegar, avocado oil, dehydrated garlic, garlic powder, and salt
  4. Mix the broccolini into the liquid and seasoning to coat it completely
  5. Transfer the broccolini to an oven safe dish
  6. Cook the broccolini for 12-15 minutes in the oven
  7. Remove it when it starts to brown and soften

 Vegan Mac Instructions:

  1. While the Broccolini is cooking, prepare the Chickapea Vegan Mac (heat 8 cups of water in a large pot over high heat until boiling. Add pasta, decrease the heat to maintain a gentle boil.  Stir and cook the pasta for 5 minutes)
  2. Drain and rinse the pasta with warm water and add it back to the pot 
  3. Place the pot back on the burner over low heat
  4. Mix the contents of the vegan mac seasoning package, vegan butter, plant-based oat milk, vegan cream cheese, 1 tsp of garlic powder, ¼ tsp salt and 1 Tbsp lemon juice into the pasta until combined. 
  5. Plate the Chickapea Vegan Mac and top it with a generous helping of cooked broccolini
  6. Sprinkle each serving with fresh lemon juice to taste
  7. Top with crushed Hippie Chips and finishing salt

Recipe Notes:

  • Tofutti plain cream cheese was used in this recipe
  • Earth Balance vegan butter spread was used in this recipe
  • This recipe is best with fresh lemon juice not bottled
  • Broccoli is thicker than broccolini and therefore is not advised as a direct substitute for this recipe
  • Ranch flavoured cauliflower Hippie Chips add a wonderful flavour to this recipe, but may be substituted with gluten-free Italian bread crumbs
