Avocado Noodle Rolls

A healthier take on a fried treat. These air-fried avocado noodle rolls are a delicious and more nutritious way to enjoy fried food. The Chickapea noodles add protein and bring more substance to the rolls, making them more filling, and they can be paired with many different sauces depending on your taste. This recipe is vegan, gluten-free, and nut-free making it a great alternative to many other fried appetizers.

 

Avocado Noodle Rolls

Ingredients:

  • 1 Package Chickapea Spaghetti
  • 2 Tbsp table salt (for boiling pasta)
  • 1 cup sliced sundried tomatoes packaged in oil, drained
  • ¼ cup red onion, minced
  • ½ lime, juice of
  • 3 avocadoes, cubed
  • ½ tsp salt
  • Rice paper, 10-12 sheets
  • Oil spray
  • Sweet chili or plum sauce for dipping

Instructions:

  1. Prepare Chickapea Spaghetti to package specifications (heat 16 cups of water in a large pot over high heat until boiling. Add pasta and 2 Tbsp of salt to the water, decrease the heat to maintain a gentle boil. Stir and cook the pasta for 7 minutes)
  2. Meanwhile, in a large bowl mix sundried tomatoes, red onion, lime juice, avocado and ½ tsp salt together
  3. Dain the pasta and rinse with cool water
  4. Transfer the pasta into the mixing bowl and toss gently to incorporate into other ingredients
  5. Spray the air fryer basket with cooking spray and preheat the air fryer to 375°F
  6. Lay out an individual rice paper wrapper on a wet kitchen towel
  7. Dampen the rice paper slightly on both sides, to the point of being able to roll it
  8. Fill each wrapper with noodle/vegetable mixture, placing the filling just below the center of the wrapper
  9. Fold the end of the paper closest to the filling over the filling and tuck it slightly under the opposite side of the filling
  10. Fold in both sides of the wrapper and roll it up tightly
  11. If the paper is not wet enough to seal the roll, brush a bit of water on the end of the wrapper before sticking it closed
  12. Repeat with remaining mixture and wrappers until you have made 10-12 rolls
  13. Place the rolls into the air fryer basket, working in batches as needed
  14. Spray the rolls with a bit of cooking spray
  15. Cook the rolls in the air fryer for 15-20 minutes, or until evenly browned and crisp, turning them over half way
  16. Serve with your choice of dipping sauce such as sweet chili

Recipe Notes:

  • If you do not have an air fryer or would prefer a healthier version of the recipe, these rolls can be eaten unfried
  • The mixture is delicious without the rice paper, served as a pasta or as a pasta salad
  • Oil spray comes in many varieties. Try finding an oil with a high smoke point and neutral flavor such as avocado oil or peanut oil.
  • If you are unable to find oil spray, try pouring regular oil into a clean spray bottle
  • Every air fryer is a bit different and will require a different cooking time
  • For best results try not to crowd the basket of your air fryer
