Sweet Chili Vegan Mac

It is sweet and ‘cheesy” with a hint of spice, the perfect comfort meal for an evening in or a lazy afternoon. The sweetness of the chili sauce and roasted peppers pairs beautifully with the hardiness of the Chickapea noodles. It is ready in under 30 minutes and is gluten-free, nut-free, and vegan. This is a mouthwateringly delicious meal that you will want to keep entirely for yourself.

Sweet Chili Vegan Mac

Roasted Pepper Ingredients:

  • 3 red, yellow, or orange bell peppers, seeded and chopped
  • 1 Tbsp avocado oil
  • ½ tsp table salt
  • ¼ tsp garlic powder

Vegan Mac Ingredients:

  • 1 Package Chickapea Vegan Mac
  • 1 Tbsp salt, (for cooking pasta)
  • ¾ cup plant milk (oat milk used for thickness)
  • 2 Tbsp vegan butter
  • 3 Tbsp plain vegan cream cheese
  • 1 ½ Tbsp sweet chili sauce
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp chipotle chili powder
  • ½ tsp flaked salt
  • ½ tsp red pepper flakes
  • ¼ cup green onion, thinly sliced
  • Finishing salt to taste

Roasted Pepper Instructions:

  • Preheat the oven to 375° F
  • In a medium bowl toss chopper bell peppers with avocado oil, salt and garlic powder
  • Spread out the peppers evenly on a baking tray
  • Bake for 25 minutes, shaking the pan every 10 minutes to stop the peppers from burning
  • Once tender and cooked remove them from the oven and add to the vegan mac recipe as directed

Vegan Mac Instructions:

  1. With 10 minutes remaining on the oven roasted peppers, prepare Chickapea Vegan Mac to package specifications (heat 8 cups of water and 1 Tbsp of salt in a large pot over high heat until boiling. Add pasta, decrease heat to maintain a gentle boil.  Stir and cook pasta for 5 minutes)
  2. Drain and rinse the pasta with warm water and add it back to the pot 
  3. Place the pot on the warm burner and set the heat under it to lowest setting
  4. Mix the contents of the vegan mac seasoning package, vegan butter, plant-based oat milk, and vegan cream cheese into the pasta, stir until combined
  5. Add sweet chili sauce, garlic powder, onion powder, chipotle chili powder, flaked salt, red pepper flakes, and roasted bell peppers to the pot, stir well
  6. Plate each portion of the vegan mac and top generously with green onion 
  7. Enjoy!

Recipe Notes:

  • Tofutti vegan cream cheese was used in this recipe
  • If you enjoy spice, decrease the amount of sweet chili sauce by ½ Tbsp and add more red pepper flakes to taste
