Spicy Pickled Cauliflower Penne

Add a little pep to your meal-time with spicy marinated cauliflower over Chickapea Penne. The cooling avocado and savoury Chickapea noodles perfectly balance the heat of the spicy cauliflower and make for a delicious combination of flavours. This recipe is gluten-free, vegan and takes only 20 minutes from prep to your plate.

 

Spicy Pickled Cauliflower Penne

Ingredients:

  • 1 Package Chickapea Penne
  • 2 Tbsp table salt (for boiling pasta)
  • 1 Tbsp vegan butter
  • ½ red onion, minced
  • 1 cup, salsa verde
  • 2 cup spicy pickled cauliflower, reserving the oil
  • 1 avocado, thinly sliced
  • Finishing salt, to taste

Instructions:

  1. Cook the Chickapea Penne to package directions (heat 16 cups of water and 2 Tbsp of salt in a large pot over high heat until boiling. Add the pasta to the water, decrease the heat to maintain a gentle boil. Stir and cook the pasta for 7 minutes)
  2. Drain and rinse the pasta with warm water before adding it back into the pot
  3. Mix the vegan butter into the noodles until melted 
  4. Add the salsa verde and red onion to the pasta and mix well
  5. Pour a ¼ cup-1/3 cup of the cauliflower marinate oil into the pot 
  6. Once well combined, plate the individual servings of pasta
  7.  Top each serving with the cauliflower, avocado slices and finishing salt 
  8. Enjoy!

  • Aurora Hot Marinated Cauliflower was used in this recipe
  • Add the desired amount of cauliflower oil based upon personal taste
  • The pasta dish can be reheated over low until warmed through after refrigeration but is also delicious served cold
