Roasted Garlic and Lemon Linguine

Roasted Garlic and Lemon Linguine

Roasted Garlic Sauce Ingredients:
- 4-6 bulbs of garlic,
- 2 Tbsp avocado oil
- ¼ tsp salt
- 1 Tbsp balsamic vinegar
- Juice of 1 lemon
- ½ tsp sea salt
Pasta Ingredients:
- 1 package of Chickapea Linguine pasta
- 2 Tbsp salt
- ¼ cup starch water, reserved from cooking the pasta
- Remaining roasted garlic cloves, to taste
- Roasted garlic sauce
- Lemon zest, to taste
- Finishing salt, to taste
Roasted Garlic Sauce Instructions:
- Preheat the oven to 425°F
- Prepare the bulbs of garlic by cutting the top off each bulb, roughly a ¼ inch on each bulb
- Set the bulbs cut side up, in the middle of a large piece of aluminum foil
- Drizzle each bulb with a couple teaspoons of avocado oil and a pinch of salt
- Close the aluminum foil in a tight packet around the garlic bulbs
- Bake the garlic for 40 minutes or until the cloves feel soft when pressed
- Allow the garlic to cool then peel each clove
- Add 2-3 blubs worth of cloves to a small blender
- Add balsamic vinegar, lemon juice and sea salt to the blender
- Puree until a sauce consistency is reached
Pasta Instructions:
- Prepare the Chickapea Linguine to package specifications (heat 16 cups of water and 2 Tbsp of salt in a large pot over high heat until boiling. Add pasta to the water, decrease the heat to maintain a gentle boil. Stir and cook the pasta for 6-7 minutes)
- Reserve ¼ cup starch water once the pasta is cooked
- Drain the pasta and rinse with warm water
- Return the pasta to the pot
- Pour in the starch water, stating with 2 Tbsp and adding more only if the pasta is still dry
- Add the Roasted garlic sauce to the pasta and mix well
- Mix the remaining cloves of garlic into the pasta, to taste
- Top with lemon zest and finishing salt
- Enjoy
