Crispy Heart of Palm Spirals

A crispy and satisfying Chickapea spirals dinner featuring air fried hearts of palm. Topped with a tangy mayo, this recipe will spice up any week night. This Chickapea spiral noodle dish is gluten-free, vegan and nut-free. It contains a variety of nutrients and is a choice you can feel good about, while also indulging in some fried food.

Heart of Palm Ingredients:
- 3 cans of whole hearts of palm, package in liquid (398mL each can)
- 2 Tbsp avocado oil
- 4 cups gluten-free bread crumbs
- 2 Tbsp Italian seasoning
- 2 tsp garlic powder
- 1 tsp salt
Chipotle Mayo Ingredients:
- 1 cup vegan mayo
- ½ lime, juice of
- 1 tsp agave syrup
- 2 tsp hot sauce
- 1 tsp soy sauce
- ¼ tsp sesame oil
- ½ tsp ginger powder
- 1 tsp chipotle chili powder
Pasta Ingredients:
- 1 Package Chickapea Spirals
- 2 Tbsp salt, (for cooking pasta)
- 2-3 cups prepared marinara sauce
Heart of Palm Instructions:
- Preheat the air fryer to 350°F
- Drain and pat dry all hearts of palm
- Slice each piece to a ½” width and place in a bowl
- Pour 2 Tbsp of avocado oil into the bowl and mix to cover all the hearts of palm in oil
- In a shallow dish combine bread crumbs, Italian seasoning, garlic powder and salt
- Roll each oiled heart of palm piece into the bread crumb mixture, coating thoroughly
- Lay the coated hearts of palm in the air fryer tray and cook for 10 minutes, turning each piece after five minutes
Chipotle Mayo Instructions:
- Add the vegan mayo to a small jar
- Stir in lime juice and agave syrup until well combined
- Mix in all remaining chipotle mayo ingredients
- Set in refrigerator until ready to use in the recipe
Pasta Instructions:
- Prepare Chickapea spirals to package specifications, (heat 16 cups of water in a large pot over high heat until boiling. Add pasta and 2 Tbsp of salt to the water, decrease heat to maintain a gentle boil. Stir and cook pasta for 7 minutes)
- Meanwhile, heat the marinara sauce on the stovetop over medium/low heat, stirring occasionally until hot
- Rinse and drain the pasta with warm water
- Plate the Chickapea spirals and top with hot marinara sauce
- Remove the hearts of palm from the air fryer and place on top of the spirals and hot marinara sauce
- Drizzle chipotle mayo over the hearts of palm and serve hot

Recipe Notes:
- If you do not have an air fryer, brush the breaded hearts of palm very lightly with oil and bake for 10 minutes a side at 400°F or until golden brown
- Every air fryer is a bit different and will require a different cooking time
- For best results try not to crowd the basket of your air fryer, cooking the heart of palm pieces in batches
- The hearts of palm are best served straight out of the air fryer.
- This recipe should only be served hot and does not work well if made ahead
